Prestwood Cellars ’07
Cabernet Sauvignon
(release date: March 15, 2010)
Our 2007 vintage consists. of a blend of Cabernet grapes from the Napa
Valley AVA, Oakville AVA and Mt. Veeder AVA. Harvest took place between
October 11 and October 26, 2007. In order to achieve our goal of the
finest depth of color, smoothness on the palate, balance of tannins and
oak, we completed the final blending in February, 2009. The result is a
rich, complex wine consisting of the following:
83% Cabernet Sauvignon
7% South Napa Merlot
7% South Napa Malbec
and 3% Stags Leap Cabernet Franc.

Prestwood Cellars ’08
Cabernet Sauvignon
The ’08 vintage is on track to become a fine blend of fruit from
the Oak Knoll District AVA and the Rutherford AVA. Harvest took place on
October 2, 2008 and October 27, 2008, respectively. Both vineyards are
anticipated to compliment the other. Our limited production and
attention to detail allowed us the flexibility not to rush the harvest
and gave the grapes a longer hang time to attain further maturing of
flavors. Blending took place in January, 2010 and consists of 92%
Cabernet Sauvignon, 5% Cabernet Franc, 2% Merlot and 1% Petit Verdot.
Winemakers Notes as of January, 2011:Deep, dark ruby
red color with a brilliant dark red hue.
A focused nose of ripe blackberry and black cherry complimented by
subtle oak notes that added layers to the nose.
On the palate, there is loads of fresh fruit flavors that are lively,
they expand on the midpalate and with the structured tannins in the
back, linger on for quite some time throughout the finish.

Prestwood Cellars ’09
Cabernet Sauvignon
For this vintage we sourced our fruit from premium vineyards in Napa Valley's Combsville, Oak Knoll and St Helena regions which will provide the complex yet balanced flavors for which Prestwood Cellars is known. Blending took place in January 2011 and is comprised of 91% Cabernet Sauvignon, 7% Merlot and 2% Petit Verdot. The blended wine will continue to rest in french oak until it is bottled in the late summer of 2011. It is anticipated to be released after nine (9) months of further bottle aging - approximately April, 2012.
Winemakers Notes as of January, 2011: This young wine has a deep, dark red color with still a youthful purplish hue. The nose is packed with dark fruits (blackberries and blackcurrants), supported by sweet oak and spice notes that are layered throughout the aroma. On the palate, it is still tight with a healthy tannic structure that frames the wine rather impressively. Once bottled, the wine's fruit expression and lush weight will come to the forefront of the wine, offering enjoyment in the short terms, and yet, the tannin profile of the wine will reward the patient consumer just as much after several years of bottle aging.

Prestwood Cellars ’10
Cabernet Sauvignon
Our 2010 vintage will consist of
fruit from the sloping hillsides of the Oak Knoll District. Being in the
southern part of the valley, the temperatures are moderated by the
weather patterns coming off San Pablo Bay. These cooling breezes and
morning fogs help the grapes retain assertive acids that warmer growing
spots can’t match. The vines are planted in porous sands and gravel,
which forces the roots to work deep into the ground in search of water.
This natural devigoration helps produce smaller berries with balanced
concentrations of tannins and acidity.
Winemakers Notes: 2010 was the longest, coolest growing
seasons in California history - and it was punctuated with some great
fall heat to fully ripen the fruit.
